German Chocolate Mug Cake

My mom gave our family a 5 minute mug cake recipe for Christmas a couple of years back and I LOVE it and I make it a lot when the kids and I need a quick and yummy sugar fix.  So, today I made a German Chocolate one.  It was so delicious!!!!  and I need to remember the recipe so, here it is.

5 minute German Chocolate Mug Cake



Put into a large microwavable mug then stir:
1 egg
3 Tbs. milk
3 Tbs. oil
2-3 drops Coconut extract

Add the dry ingredients and mix well:
1/4 C flour
1/4 C sugar
2Tbs. baking cocoa
1/4 C Caramel Bits* or mini chocolate chips (or both!)
1 Tbs chopped pecans
1-2 Tbs shredded coconut

Microwave for 3 minutes at 1000 watts.  Invert on a plate and top with caramel syrup.

They are in the baking aisle, and I love their tiny size and that I don't have to unwrap!

3 months!

My sweet girl is growing up so fast! She turned 3 months last week.  She is doing really well.  At her 2 month appointment she weighed 14 lbs.!  (13.15)  and was 24.5 inches long.  She was 95% weight and height.  She is such a great little addition to our family. 

Her shirt says, "Stripes are slimming".. cute, but I can still see her sweet little pudgy belly! ;)

The Terrifically Terrible Threes





Do these pictures depict orneriness? I sure hope so, because that is real life, people!  Maiyas favorite thing to do right now, is to dress up in a million different outfits per day.  I really should lock up her closet and drawers!  Her favorite accessories are her Sunday tights (which I have a hard time keeping without holes... good thing it is getting warmer, so she won't need them for church).  And she loves to wear socks, but not on her feet.  She likes to wear them on her hands.  They are her gloves. She then will ask me to turn on Pandora for her so she can dance to Disney songs.  And of course I oblige, because frankly, the wrath of Maiya scares me.  ;)  
A week ago or so, Maiya got into my nail polish and made a huge mess all over her hands and toes.  I disciplined her accordingly, and explained that I needed to help her, and I put the polish high up. Well, yesterday I caught her again in the bathroom with nail polish everywhere!  All over my decorative towels!  In her hair! Oh man!  My friend recently told me that for most children the hardest ages to raise them come at age 3 and age 13.  So, now I will live in fear of age 13!!! 

Okay, now that we got some of the terrible out of the way, we can talk about some of the terrific. :)  Miss Maiya is such a great big sister.  She loves her sister Aftyn, they are already such great friends.  She is so interested in helping her that she can change her diaper with moderate help from me.  She picks out all of her clothes for her, she throws her diapers away for me.  She has been such a big help to me.  Anytime I ask her to do something for me that involves helping Aftyn she does it right away.  The other day I was burping Aftyn, and Maiya swatted my hand away and explained that I was doing it wrong, banged on Aftyns back a couple of times, and Bam!!! It worked like a charm.  I will take the bad with the good :)  I love my big girl Maiya. 
She even put 'gloves' on Aftyn's hands!  They really play well together already!

Sunday Best

These kids are just growing up so fast!!!  After church on Sunday, I decided to take some pictures of them.  
I know that I do not have enough hands for all 3 of these kids, but I am so glad for all of the help that people give me, especially when I am trying to juggle them all at church.  It makes my 2 hands seem like enough when I get help. :) Between taking kids to the bathroom, and feeding and diapering Aftyn, I am often asking people to help me, and they do.  Parenthood is a great way to teach us humility and to accept help from others (or beg of it, like I do.)  But it is definitely rewarding!  I love my sweet kids.
